Parmesan encrusted tilapia with honey roasted carrots and white rice

We buy the frozen parmesan encrusted tilapia from Sam’s club. (Edit: This tilapia has food dye in it so we no longer eat this at our house.)

White rice is a staple at our house. The honey roasted carrots are a treat.

Honey Roasted Carrots

8 carrots, peeled or 1lb baby carrots
3 tbsp olive oil
1/4 cup honey
salt and pepper to taste

  1. Preheat oven to 350 deg.
  2. Place carrots into a baking dish, drizzle with olive oil.  Mix until completely covered with oil.
  3. Pour on the honey, then season to taste with salt and pepper. Mix until completely coated.
  4. Bake until just tender:  40 minutes for baby carrots, 1 hour for whole carrots.
