Yellow curry chicken with peppers and rice

Trader Joe’s helps me make this dish.

Serves 4


1 bottle Trader Joe’s Thai Yellow Curry Sauce
1/2 onion, chopped
1 tbsp garlic, minced
1 red bell pepper, chopped
2 large chicken breasts, cubed
Dash of olive oil

  1. Warm the olive oil in a skillet.
  2. Add onion and garlic, cook until translucent.
  3. Add chicken breasts. Cook until no longer pink.
  4. Add bell pepper, cook 1 minute.
  5. Pour Yellow Curry Sauce into skillet. Cook until just boiling.
  6. Remove from heat and serve over rice.
